Recipe from: KVCC Community Culinary & Nutrition

INGREDIENTS:

  • 1 medium red cabbage, cored and sliced thin or shredded, about 8 cups

  • 2 medium apples, cored and sliced thin, about 2 cups

  • 1/3 cup apple cider vinegar

  • 1/3 cup maple syrup

  • 1 ½ tsp. kosher salt

  • ¼ tsp. black pepper

DIRECTIONS:

  1. Core and cut apples into thin slices.

  2. Core and cut cabbage into thin slices or shred with a box grater.

  3. Sauté cabbage and apples in oil until slightly browned.

  4. Add vinegar, water, maple syrup, salt and pepper.

  5. Simmer until cabbage and apples are tender.

  6. Plate and enjoy!
