Recipe From: KVCC


6-8 large ears of corn, shucked with husk and silk removed
2 cups cherry tomatoes, halved
1 bunch of greens of your choosing
2 cloves garlic, minced
1/4 cup fresh lime juice
Salt and pepper to taste


  1. Cook the corn (via your preferred method - grill, boil, etc.) until just tender.

  2. Transfer corn to a cutting board, allowing to cool enough to handle safely. When cooled, cut the kernels from the ear.

  3. In a bowl combine the corn kernels, tomatoes, greens, garlic, and lime juice.

  4. Stir. Taste. Season with salt and pepper.

  5. Serve and enjoy!
