Recipe From: KVCC

Ingredients:

½ pound of green beans
½ cup Honey
½ cup extra virgin olive oil (or other oil of choice)
½ cup rice wine vinegar
Salt and Pepper to taste

Directions:

  1. Make the vinaigrette. Whisk together honey, olive oil, rice wine vinegar, salt and pepper.

  2. Wash the green beans, then trim the stems. If desired, cut the beans in half.

  3. Smash the green beans. EASIER: Place beans in large zip lock bag, squeeze our air and seal. EASY: Please beans between two layers of parchment paper. Smash them with a rolling pin, mallet, or anything else that won’t break. They should be smashed but still resemble green beans.

  4. Toss the smashed beans with vinaigrette. Add it slowly- you may not need it all.
