Recipe From: Bronson Hospital RDs


1 1/2 pounds cherry tomatoes, diced
1/2 cup finely diced onion
2 hot peppers of choice, seeded or minced*
2 cloves garlic, minced
2 tbsp lime juice
1 tbsp fresh oregano
1 tsp honey
2 tbsp fresh mint leaves
1/2 bunch cilantro, chopped
salt, to taste

*You can also substitute dried jalapeno, cayenne, etc. The general rule is 1 tbsp fresh=
1 tsp dried.


1. Dice tomatoes and drain in a strainer over a bowl for 15 minutes.
2. Combine tomatoes, onion, peppers, and garlic in a large bowl. Pour lime juice over the top. Stir in oregano, honey, mint, cilantro, and salt. Refrigerate for 1 hour so the flavors meld.
3. Add additional salt or other ingredients to taste, and serve with fresh tortilla chips.
