1 chicken breast
handful of fresh parsley
1 1/2 avocados, mashed (about 1 cup)
1 celery, diced
1 garlic, chopped
1/2 tsp salt
1/4 tsp pepper
Season chicken with salt and pepper and place in a medium pot. Cover with water, and add a handful of fresh parsley to the water.
Bring to a boil, then reduce the heat to low and cover. Cook until the chicken is firm to the touch and cooked through, about 10-15 minutes.
Remove the chicken from the water and allow to cool, then chop it up. You should have about 2 cups.
Put the chopped chicken in a medium bowl. Add the rest of the ingredients and mix well.
Serve on bread, on top of greens, or in a wrap. Enjoy!
