Recipe From: KVCC, Camille White

Ingredients:

5 very ripe apricots, peeled and pit removed
2 tbsp cider vinegar
3 tbsp extra virgin olive oil
1/2 tsp sea salt, to taste
Fresh black pepper, to taste

Directions:

  1. In a blender, blend all ingredients until smooth.
  2. If needed, add more olive oil to thicken. This will depend on juicy the apricots are. 
  3. Adjust salt and pepper to taste.
