Did you know you can also eat the leaves and stem? The leaves taste somewhat like kale or collards, and the stem has the same sort of consistency as the florets. If it's tough, you can peel it first with a vegetable peeler. I usually put it in the food processor and blend it up with the rest of the head while making cauliflower "rice". My favorite thing to make with rice lately is making the cauliflower pizza crust up above, which is a recipe from my aunts boyfriend. It's perfect topped with fresh mozzerella and some farmers market basil!
