Recipe From: Cary Allen
Ingredients:
8-10 large sunchokes
1 onion
1 medium apple
1/4 cup safe
2 large eggs
1/2 cup garbanzo flour*
salt and pepper to taste
olive oil or clarified butter
Optional: 
1/2 cup grated hard cheese 
1/2 cup minced hard sausage
*or other gluten free flour of choice
Directions:
- Peel and grate sunchokes, julienne onions, peel and thinly slice apples, and thinly slice sage. 
- Assemble all ingredients in a large mixing bowl. Knead until all ingredients are a uniform paste. 
- Preheat griddle or sauté pan to at least 350 degrees or medium heat, and coat liberally with olive oil or clarified butter. 
- Form patties and fry. Make sure to flip and cook until both sides are a dark, golden brown. 
- Garnish with fresh parsley or chive and top with yogurt or creme fraiche, if desired.
