8-10 large sunchokes
1 onion
1 medium apple
1/4 cup safe
2 large eggs
1/2 cup garbanzo flour*
salt and pepper to taste
olive oil or clarified butter

1/2 cup grated hard cheese
1/2 cup minced hard sausage

*or other gluten free flour of choice


  1. Peel and grate sunchokes, julienne onions, peel and thinly slice apples, and thinly slice sage.

  2. Assemble all ingredients in a large mixing bowl. Knead until all ingredients are a uniform paste.

  3. Preheat griddle or sauté pan to at least 350 degrees or medium heat, and coat liberally with olive oil or clarified butter.

  4. Form patties and fry. Make sure to flip and cook until both sides are a dark, golden brown.

  5. Garnish with fresh parsley or chive and top with yogurt or creme fraiche, if desired.
