Ingredients:

1 lb bok choy
2 tbsp canola oil
1 garlic clove, chopped
1 tbsp ginger, grated
1 to 2 tbsp soy sauce, or to taste

Directions:

  1. Cut white stalks from bok choy and slice into one-inch pieces. Coarsely chop green leaves.

  2. In a large skillet, boil 1/2 cup water. Add bok choy stalks, cover, and simmer over medium-low for 5 to 7 minutes. Uncover and cook on high until water evaporates, 2 to 4 minutes.

  3. Add bok choy leaves, oil, garlic, and ginger, tossing often until the garlic is fragrant.

  4. Add soy sauce to taste, stir, and serve immediately.

Serving Suggestions:

Serve with rice and a protein of your choice. If you’re looking for something a bit sweeter, add in a tbsp of honey. If you’re looking something with a bit more kick, add in some siracha or red pepper flakes.
