1/2 onion, chopped
1 green pepper, chopped
1 bunch green onions, chopped
2 jalapeno peppers, chopped
1 tbsp garlic, minced
1 pint cherry tomatoes, quartered
1 cup oil
1 tbsp dried Italian seasoning
2 cups black beans
2 cups black eyed peas
1/2 tsp ground coriander
1 bunch fresh cilantro, chopped


  1. In a large bowl, mix together all ingredients besides fresh cilantro.

  2. Cover and chill in the refrigerator for at least 1 hour. When ready to serve, toss with desired amount of fresh cilantro.
