Recipe From: Bronson Hospital RD’s

Ingredients:

1 1/2 cups hard wheat berries
1 spring onion, finely minced
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp honey
2 cups spring vegetables (asparagus, peas, radish…)
1/2 cup dried dates
1/2 cup walnuts
1/2 cup tangy cheese (goat or feta)
salt and pepper

Directions:

  1. In a large pot, combine the wheat berries and 3 cups of water. Bring to a boil uncovered for 1 hour, or until tender. Drain and let cool.

  2. While wheat berries are cooking, whisk together oil, vinegar, and minced onion. Set aside.

  3. Once the wheat berries are done, combine berries with the rest of the ingredients in a large bowl. The spring vegetables can be added raw, lightly sautéed, or steamed. Stir in salt and pepper to taste
