Ingredients:

  • 1 cup uncooked quinoa
  • 1 1/2 cups fresh shelled peas *
  • 1/2 cup raw almonds, chopped

For the dressing:

  • Juice from one large lemon (about ¼-1/3 cup)
  • 1/3 cup olive oil
  • 1/8 teaspoon salt (more to taste)
  • 1 teaspoon honey
  • 1 clove fresh garlic finely chopped

Cook the quinoa according to package directions.  Meanwhile chop almond coarsely by hand or in a food processor.  Next mix all dressing ingredients in a small jar and shake until well mixed.  When quinoa is done, turn off heat and add peas to the pot.  Fluff with a fork.  Place quinoa and pea mixture along with chopped almonds in a large bowl, pour over dressing and stir well.  Season with salt and pepper to taste.

*Can also use frozen peas
