Ingredients:
1 acorn squash
1 small white onion, diced
1 clove garlic, minced
1 tbsp oil or butter
2 breakfast sausage links, cubed
1 apple (pick your favorite!), diced
Pinch of nutmeg
Pinch of cloves
Drizzle of honey
Items in bold are produced locally and can be bought at the PFC or markets
Directions:
1. Cut squash in half lengthwise, scoop out seeds, and place cut side down in a baking dish. Pour a half cup of water into the dish, and roast at 375 degrees for 35 minutes, or until squash can be easily pierced with a fork.
2. On stove top, sauté onion, garlic, sausage, and apple with oil or butter until cooked through. Sprinkle with nutmeg and cloves.
3. Stuff squash halves with the filling, drizzle with honey, and enjoy!
