Don't toss the stems! They're pretty taste and you can peel away the outer, sometimes tough layer to eat (just like with cauliflower!). Peeled stems can be cut into julienne strips or into rounds, then quickly sautéed, or shaved with a vegetable peeler and eaten raw.
