Recipe From: Bronson Hospital RD’s

Ingredients:

2 cups blueberries (or other seasonal fruit)
1/4 cup water
1 tbsp spice flavor (ginger, cinnamon, etc…)
2 tbsp honey
1 tsp vanilla extract
2 tbsp chia seeds

Directions:

  1. Wash fruit, and chop larger pieces into small chunks. Remove stems, pits, and seeds as necessary. Berries can be left whole.

  2. Place fruit, desired spices, water, and honey in a saucepan and heat over medium-low. Bring to a simmer, and cook until fruit begins to break down, about 10 to 12 minutes. Give mixture a taste and if needed, add more honey. Stir occasionally.

  3. Remove from heat and let cool slightly. Give mixture a taste and if needed, add more honey.

  4. Stir in chia seeds and let set for 15 to 20 minutes. Stir once or twice to ensure chia seeds are not forming clumps. The mixture will continue to thicken as it cools, and if a thicker consistency is desired, stir in an additional 1 tsp of chia seeds. Jam can be stored in the refrigerator for up to a week or frozen up to 3 months.
