Recipe From: ACF- Mangia Downtown

Ingredients:

1 pint green strawberries
1 cup apple cider or white vinegar
1/2 cup cool water
3 tbsp honey or white sugar
2 tsp flakey salt (use 1 tsp if using fine salt)
2 sprigs fresh thyme
10 whole black peppercorns
10 whole coriander seeds
2 bay leaves
1 tsp whole mustard seeds
2 whole cloves
1/4 tsp caraway seeds
1 pinch red pepper flakes or 1 small fresh green chili

Directions:

  1. Rinse strawberries and remove tops and any damaged berries. Place berries in a quart sized jar or other heat proof container.

  2. Heat vinegar, sugar, salt, and all spices to a simmer. Remove from heat, add cool water, and chill to room temperature.

  3. Pour the room temperature brine over the berries, cover, and place in the refrigerator overnight. They will keep in the refrigerator for a week or more.

Notes:

The spices can be changed according to your liking, and the sugar level can also be adjusted for a more sweet than savory finish.

Serving Suggestions:

Serve whole or sliced as a garnish, salad accompaniment, or with cheese and meat plates.
