Recipe From: The Fire Hub

Ingredients:

1 lb okra, cut into 1/2 inch pieces
2 cups black beans
1 ear corn, kernels separated
1 large white onion, diced
1 poblano, seeded and diced
2 tbsp olive oil
1/4 cup lime juice
1/4 cup fresh cilantro, finely chopped
1/2 tsp ground pepper
1 tbsp salt
1 tbsp cumin

Directions:

  1. Combine all ingredients in a large bowl and mix thoroughly. Cover and refrigerate for at least one hour to allow the flavors to come together.
