Recipe From: Bronson Hospital RD’s

Ingredients:

1 cup milk of choice
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground nutmeg
1/8 tsp ground cloves
pinch of salt
1/2 cup carrots, finely grated
1//2 cup old fashioned rolled oats
1 tsp vanilla extract
1 tbsp maple syrup

Optional: chopped walnuts or pecans, shredded coconut, dried fruit

Directions:

  1. Combine milk and spices in a medium sauce pan over low heat. Whisk until smooth.

  2. Add carrots and oats. Stir well, bring to a simmer, and continue stirring to prevent burning on the bottom. If mixture starts boiling, reduce heat. Cook for 10 to 12 minutes or until oats are soft. Add additional milk if mixture becomes too thick.

  3. Remove from heat and stir in vanilla and maple syrup. Serve warm with optional toppings.

Notes:

If you don’t have all the spices, you can use a pre-mixed pumpkin pie spice.
